This is an adaptation of the famous French dish, Sole With Grapes. The dish originated in the farm country of Normandy near where the Americans landed in WWII. It is sometimes made with both apples and grapes as Normandy is famous for its apples and Apple Brandy (Calvados). Like most country recipes, it is very simple and delicious if made well.

Ingredients

4 Pork Chops or 1 lb. Of diced pork
3 tbsp. olive oil
2 pkgs. of white sauce
1 bunch Seedless Grapes
1 cup white wine or Port and water to cover meat
1 tsp. sugar

Directions

Sauce, the Easy Way

Buy 2 pkg. of prepared white sauce. Fix it according to Directions. Stir in an extra egg yolk to make it richer. Add the grapes to the sauce, heat and you are done.

Simmer Pork in wine and water until very tender. When the Pork is done, place it on your serving platter and cover it with the sauce.
